Why beer works with cheese
Cheese is often paired with wine, but beer has strong arguments: bubbles, freshness and a wide variety of styles open up many combinations. The three ideas below are the brewery’s suggestions, not rules. The best pairing is the one you enjoy.
Idea 1: Blonde 22 and cheese
Blonde 22 is our core blonde, at 4%. Its suggested pairings include charcuterie, grilled meats and cheese. It is the easiest beer to set beside a mixed board, when you do not yet know what everyone will prefer.
Serving idea: a board of local cheeses, a little charcuterie, and Blonde 22 for everyone. It is also a good benchmark for the next two ideas.
Idea 2: Gose Poire Thym citronné and goat’s cheese
Gose Poire Thym citronné is our spring seasonal at 4.9%. It is brewed with water, barley malt, wheat malt, pear, lemon thyme, hops, yeast and a touch of salt. Suggested pairings include goat’s cheese, as well as oysters, fish tartare and fine charcuterie.
Something to try: a fresh or aged goat’s cheese, served simply, to see how the pear and lemon thyme in the beer play with it.
Idea 3: Saison Framboise Hibiscus and alpine cheese
Saison Framboise Hibiscus is our summer seasonal at 5.6%, brewed with water, barley malt, wheat malt, raspberry, hibiscus, hops and yeast. We suggest it with alpine cheese, as well as a mixed salad, Mexican dishes or dark chocolate.
Something to try: a piece of alpine cheese at the end of the meal, instead of dessert, with a glass of this fruity saison.

Finding your own pairings at home
A simple way to compare without getting lost:
- Pick two or three cheeses with different characters, such as a goat’s cheese, a hard cheese and an alpine cheese.
- Pour small amounts of each beer, at a good temperature.
- Taste the cheese on its own first, then with a sip of beer, and note what you prefer.
- Keep Blonde 22 as a reference to compare the others against.
You do not need to be an expert: just note what you like, and try again with other cheeses.
Where to find the beers and cheese
The core beers are available at the brewery and in our shop. For seasonal creations, availability varies: ask the brewery, or read our article on seasonal beers. Among our partner shops there is also a cheese dairy, Fromagerie Blanc-Meyrat in Villars-Burquin.
